Akuri Eggs

Parsi spiced scrambled eggs. Serves 1.


Ingredients
  • 3 eggs
  • 1/2 tsp cumin seeds
  • 1 chilli deseeded and finely chopped
  • 1 med tomato, diced
  • 1 onion, diced
  • 1 tsp turmeric
  • 1 clove garlic
  • coriander leaf
  • salt to taste
Method
  1. Whisk eggs with a pinch of salt and put to one side
  2. Heat 1 tbsp oil (or butter) in a small pan and add cumin seeds for 30s (splutter)
  3. Add onion, chilli, tomato, and garlic and sautee until the tomatoes have broken down
  4. Add the turmeric for 30s
  5. Turn the heat right down. Add the eggs, cooking until desired firmness
  6. Serve with coriander and yoghurt
